How to make my villagers NOT die?!
Every time I start off my village, I start off by building a boarding house, a crop field, & a fishing dock so we could focus more on food. But come a few hours in-game later... The population starts dropping fast with me helplessly watching as I try to do what I can to save them, Either I'm doing something wrong, or there's a mistake I keep running into. Can someone help explain what's happening that messes me up so much?

You really need to get a Gatherers Hut up and running as your first food source. That is your best bet for food very early game. A well managed Gatherer Hut can get you 2000+ food per year (*). Crop fields won't provide any food until harvest time, which is autumn time.

Fishing docks are tricky to support early game as to get the best out of them you need a house and barn nearby. Their output is also dependant on water coverage so a good spot will have at least 50% water coverage.

Personally I would build houses instead of a boarding house. On a slightly counter-intuitive note, try starting on Medium or Hard difficulty !! The reason I suggest this is pure numbers - the harder the difficulty level the fewer mouths you have to feed, so you don't need to produce so much food !!

(*) BTW, food demand is easy to calculate as each person (even children) requires 100 units of food per year.

Oh, you don't mention population size or number of houses. The general rule is only build 1 house per year !! Expand too quick and you head for a death wave later.

You might want to take a look at some of the Guides. If you look under "secrets" there are several good ones about food and food production. If there is a river, or better yet, a lake nearby I build a fishing hut, house and barn where I get the best coverage. Then, I can build a Gatherers Hut within the Forest node. With the fishing hut and gatherer up and running I do not have to worry about a crop field until my population reaches 75-80. Just those 2 industries going strong (producing over 10,000 units of food per year) will feed a population of 75-100 people.

Gathering Post. Forget the Boarding House, your population doesn't grow and it uses resources you need for actual housing.

First steps for me on Medium Hard settings.

School Placed and building
Everything else I place and pause.
Forestry Node. Includes Forester, Gathering Post, and Hunting Cabin.
Now Place and Pause your Market, so the Radius is skimming the Forestry Node's radius.
The woodcutter, blacksmith and tailor buildings.
Six Houses. Put two near the Market and School. The rest next to the radius of the Forestry Node.

Unpause the School Once supplies are delivered, Hire two Builders, and begin the Forestry Node, Decide on which has more, Do you have loads of trees in the Forest Node? Then build the Food first, if not, then build the Forester first, and then the Food, starting with Gathering Post.
Once those are all built, Unpause the Woodcutter, and One or two houses.
Then build the Blacksmith, Tailor.
Do not unpause the Market until you need a second Storage Barn. Usually after eight houses are built, and the First Forestry Node is fully staffed. Year six to ten. Now you should have graduating students, which you can put straight into the Forestry Node.

If you have a fantastic Fishing spot, very close to the Storage barn, then build that. Otherwise, wait until you have a Market built, so you can build housing and storage beside the Fishing dock. A great spot will have More than 50% of water surrounding the dock. So a Fantastic spot will have more. Look for spaces that have rivers joining lakes and place a dock there. If you have only river. Look for a spot that is a "U" bend. You want the "U" to be upside down, and place the dock in the middle of the upside down "U" Also, if a river has a stream behind it, the stream's water also counts as surrounding water space.

Once your initial six houses and first placed building's are finished. Start two or three 8x15 crops. Give them a house or two, and a storage barn after the Market is built. Then farm 2 in Veg 1 in Grain. Always alternate the crop farms as that will protect the fields from catching any contagions.

Don't build Orchards, until you have extra population.
Always keep at a minimum of 1 labourer at all times.
Rotate One worker through the Woodcutter, the Blacksmith, the Tailor, keep the Blacksmith's and Tailors limits to 50 or 100. Reach limit, then switch them. I raise the Woodcutters limits for every new house. by 200 for each stone house I build.
Meanwhile continue to mine out all the available stones, and iron on the ground in smaller sections. Begin with the Forestry Node first always.

You should try the mod Hard Modes. I have survival mode two educated people with a tool each that's it. I have managed only once to get food up before they die. It's the only mod i use.

no thanks I think the game start is difficult enough lol
I do like to play the North because that doesn't make it any harder at start, easier actually, but the long game is harder because of the more realistic aging - mess up the schooling and you pay for it for ever.

so they are starving it sounds? that's the most common death in this game. I wonder whether that's the most common death in reality. My guess would be yes it is, but not as high a percentage as in this game. My guess is in reality it would be more like dehydration, starvation, illness, hypothermia, injury/animal, suicide from decaying tooth.

Crops are more complicated than you think pal, and trust me... I find tf2 easier than Banished. But I still love both games equally.

Believe it or not, I have a very good grasp on how complicated crops are. I also have a very good grasp on how complicated fishing is. Your fish production depends on so many things - amount of undisturbed water in the area of influence (circle around the fishing hut) first and foremost. And every single building within the area will decrease the output, especially another fishing hut (practically halves the production) and trading posts.

I'm actually looking for a mod that makes citizens immortal so I can play more of a "sims like" style, if anyone knows of such a mod.
