More Citizens?
I have failed many towns because the citizens in my town won't have kids and just start dying out... Does happiness affect this?

Are they pairing off or living alone?

To grow your population, you should build one house for every 2 adults (male/female). If you build more houses than that, the couples will split up and not have kids. Less than that and they will stay living with their parents and they won't have kids. If there are adult kids living in the house, the parents won't have more kids either. It helps to have a town hall, it will tell you how many adults you have vs how many houses. To slow down growth, only build 1-3 houses per year.

I try to build my houses at a steady rate when a male/female couple of kids grows up to be about 16-20. Then they have their kids later and prevent your generations from dying too close to one another. You need to space out the births.

Just build houses for your starting population then let them all fill up with babies. So, depending on which start difficulty you used you will have 6, 5 or 4 houses. Letting them all fill up with babies and not building any new houses until the kids have grown up into their 20's is a good way of controlling population while you scramble around trying to get your food production under control. It basically means you control how much food you need a year. As each person each consumes 100 units of food per year (even babies) you know exactly how much food you need to produce.

And don't panic with the kids thinking you need to pair them up early. I quite happily let my kids reach 25 before I build any more houses. They will still have plenty of time to have their 3 kids as women are able to reproduce until they reach age 40.

Then just never have more houses than adult pairs otherwise they split up as ebrumby mentions. Remember, this game is not a sprint - try and build too many houses too quickly and you'll likely end up with too many mouths to feed and not enough food.

EDIT - Typo !

I had my initial pair (Adam & Eve) have a couple of kids, then split up into the two houses I had, father and daughter in one house, mother and son in the other house, AND THEY STILL HAD KIDS (the parents did, I mean)!

the main problem is either overgrowth - building too many houses or the opposite - too little houses.
