Removing the time limit would completely break down the game, how many people would you process each day ? Would they give you just enough to pay all your expenses (around 10-12 ?) - less ? more ?
If you'd have unlimited time, you wouldn't miss any discrepancy, you'd always have enough money, and any moral qualms would be academic at best - well, they already are, this being a video game, but still, the game tries to force you to make a choice, help or sometimes even save a stranger's life, or have some more money for yuour familly ? - This choice would be gone when you'd just get all the money you want.
If you're really having lots and lots of trouble, you can turn on Easy Mode in the options, +20$ per day, it doesn't mean you can just stroll through the game and do close to nothing, but it does help.
The first day is 6 minutes long, as the game progresses and gets more complicated the days get longer too, but there's always time pressure.
You're right, in real life, you don't get as much time as you like. But I play video games for enjoyment - I expect some breaks from reality.
