As for the russians... many people claim bias as of course it is a Russian developer etc. They do have good planes overall with a lot of planes too chose from and the lower levels LaGGs seem like a good choice as they have cannons at like rank 3 or 4.
Other nations such as Japan have good turning times, and out perform Russians on that so generally when you get Japan v USSR Japan tends to win.
But my opinion is that it is worth while playing all the different nations and see which one you like better when you get to the higher ranks. As I play on Historical Battle I tend to play all the nations with in a day as you only get the one plane and that plane I generally tend to do alright in.
The German aircraft are more realistic, but as has been said here they were outperforming any British aircraft earlier in the war. Similarly to the Napoleonic wars where the French had all the best ships, they simply didn't have the skilled crews that the Brits did.
Most planes are effective when you take advantage of their flight characteristics, i found this time after time. P-36! I hated it, until I cut the throttle while turn fighting. Typhoon Mk 1a also hated it until I used it's speed and climb to quickly change direction or escape, and those MGs do in fact shoot down even Russian planes (it might take a couple of passes of course). It is one of my favourites now.
The British and Japanese suffer most from a limited range of aircraft, especially below t5. But the Hurricane II is a great fighter (prior to the last patch at least). The Japanese also have a cannon armed fighter at t3 as well and it has 2 cannons not 1.

The He 112 A-0 can out-turn any spitfire! Not to mention, it's cannon is amazing!
German: Bf109, Fw190
Soviet: Chaika, LaGG, Yak-9T, Mig-15
Britain: Spitfires, Beaufighter
Japan: Zero, Shidenkai, G8N1
USA: P39, F4U
So yeah German and Soviets are better.
Overall i don't think there are any stand out planes though, and if devs believe there are they do usually adjust them to try and even planes out more.
Enjoying the game immensly hate colliding with planes though..
