Best ammo to use?

Depends on your needs/and or target. AP for tough/armored targets (not tanks or bunkers etc), HE for soft targets (very good vs bombers for example, or Trip-A or trucks etc). Incendary if you want to see where your bullets are "kinda" going and stealth if you are a crack shot and you don't want your target (mainly another air asset) to see you shooting them.
I want ammo mostly againts other fighters/ bombers... but i cant choose which ammo to use .. These ammo packs always contait 2-3 ammo types ( like HE , armor piercing etc..) But how can i choose if i want use only armor piercing and nothing else?... And i heard that Stealth is best because it contain the best combination of ammo?

Use incendiary bullets. For most of planes they are on universal tape, but for brits(Spitfires and Hurricanes) I'd reccomend tracers, they are all incendiary
Steath maximises damage because there are not tracers.Tracers do little damage and should only really be used as a aiming asist. Useing steath ammo is not very hard you don't need to be a crack shot :P. API is also a good choice or AP. Im not a fan of incenduary as if the plane is not made of wood it doesn't do much.If you want cannon ammo use steath with HEI or HEIT rounds. Hope this was helpful :D

API and AP ? There are also Armor packs? and how can i use Stealth with HEI or HEIT? How to choose?
you can only choose the rack of ammo not the indivdual bullets
If you have both MG and cannons, use stealth attack for cannons, also don't shoot from far distanse, it should be less than 500 meters or you'll just loose bullets
pay attention to the abbreviation listing on the different ammo types. That is the order in which the various rounds are fired.

You will notice that some ammo types offer a good variety while others are specific towards ground targets, or bombers, or fighters.

I like stealth ammo against fighters, seems to cut out the tracer round and im not sure those are even effective for damage.

Also its really obvious when you see tracers going at you where the enemy is.

If i have a heavy fighter with no bombs, ill go armor piercing or select whatever type has the most frequency of that round. AP rounds seem to tear up bombers a bit better.
Stealth ammo actually is more effective against bombers than AP. With AP you're firing tracers that tell the bomber which way to turn and dodge, rendering 95% of your ammo ineffective. With stealth ammo you can shoot a ton and land a lot of hits very quickly in a short space of time, which is key to taking out bombers before the cannon age.
I started using stealth again. Those rounds are best for BnZ and even for some dogfights.
Although I did discover that they are pretty useless when firing from right behind someone (especially bombers), they tend to do little damage apart from some bringing ailerons in the red.
Best is to fly in from high and from the side; wait untill you are close and match speed a little; and then go guns full blazing! Most of the time you take out an engine or other crucial part of the plane. Another plus is that the enemy doesn't know where the fire came from and will not be able to react properly so most of the time you can attack a second time.
Got 5 kills this way and didn't lose a single plane.
Ammo choice depends on faction choice, and by implication, gun choice. For some faction, eg. Imperial Japan, Stealth is often an inferior choice to tracer when dogfighting because Japanese rate of gun fire is lower.

This is true. You do need a high fire rate when using stealth. I found that the 2nd tier fighter of the russians with its 4 machine guns (7,7mm) buzzsaws trough anything when close enough.
