It's a video game that is dedicated to having tanks specifically fight tanks. Tanks weren't made to fight tanks, that's what tank destroyers are for.
Once large scale production of tanks such as the Sherman, T-34, and Panzer IV (Long barreled), tanks were able to take on other tanks in combat. The introduction of Heavy tanks is mainly what kept the tank destroyers in service and the US still had use for them. Though US TD's were often used for more recon work then engaging tanks due to there thin armor and open top.
As for the 1 crewman remaining, a tank can not be combat effective with 1 crew member. In-game, the tank must be able to move (Driver) and shoot (Gunner). If you are down to 1 crew member, it can not do both. It was common to abandon tanks after 1-2 hits as it often resulted in serious damage that could not be repaired in the field. You could try and save the tank and leave the field, but that was not usualy an option.
With 2 crew members left in-game, you probably have damage to your tank, a long reload due to no loader, and you should be backing off as 1 more more lost crew means your tank is out of action.
