BnZ (or "energy fighting") means climbing to a good altitude above your target, and then attack them in a dive to their altitude. After the attack run, the speed you gain from the dive is used to climb back to altitude, and prepare the next BnZ attack. If you fight in BnZ style, you do *not* want to do a lot of turning with your enemy, as that costs you a lot of your energy, and makes it difficult to get to a good altitude, again.
As opposed to that, TnB (or "turnfighting") means that you try to bait your target into wasting a lot of energy on turning and dodging until you have the upper hand in maneuverability to shoot them down, or until they slow down too much and crash because of stalling.
Most aircraft in the game are specialized towards one or the other type of maneuvering, and very few craft can do both to a good degree. The Zero, for example, is really good at turnfighting, but not very good at energy fighting, while it's the opposite on most US aircraft. And if you fly a specialized craft like that, you generally want to avoid trying to fight in the opposite style, because you're playing to your own disadvantages that way.
