Both seem very realistic to me, minus the added annoyance of "turbulence" (really just the game taking over the controls and shaking the plane erraticly).
for what its worth, yeh, it does...
GTA-V has some of the most semi-realitic flight I have seen in a non-flight game.
The physics are not right but the cockpits are modeled with working gauges including:
-Airspeed Indicator (in knots)
-Altimiter (in feet),
-Vitural Horizon
-Pitch indicator/Vertical speed indicator
-Turn coordinator
-Heading Indicator/Compass
Along with working cockpit gauges there is also modual damage modeling, you can have single controll surfaces blown off, for example a single aileron, and you will incur semi-realitic hampering on your controll.
Overall, flight in GTA-V is far better than any previous version and is borderline semi-realitic. Still far from WT, but much MUCH better than flight in many other games.
@OP
Here are a couple vids for you, hope they help :)
(keep in mind that I fly from virtual UAV cockpit w/Joystick in WT, so it might look different form what you expect.)
Cockpit view in GTA (From a Duster, but the gauges are the same in all):

And, since I am a bomber pilot and thus those are all Bomber vids, here is a clip from back in the day in one of the rare instances when I fly a fighter:
