Can someone please explain in depths what each one does and what they are good for?

I know universal is good for wooden planes.... If Im not mistaken

You get less tracers and practice shells with different selections after the default.
If you enjoy ground attack - try that.
If not try steath or the other listed options and see what works best for you.

OK but serio - what are best ammo types for killing enemy planes?

Do they vary by tier? (I think so).

Do they vary by nation? (Doubt this one).

By tier : not really, rather by caliber.

By nation : definitely, just check them out.

OKay I can only explain the 7mm and the 12mm, because once you get to the bigger cannons there's so much variance between them you cannot just say 'this one or this one'

7mm (avoid 'ball' and 'T' ammo it's basically useless.)
AP = best penetration
API = less penetration, chance to start fire
API-T = even less penetration than API and tend to be less accurate. This mainly applies to the 7mm because once you get to bigger calibers, the weight of the tracer material is less compared to the total projectile weight, compared to 7mm
I = good chance to start fire, doesnt penetrate well
AI/IAI = not much penetration, chance to start fire. These mainly are for inticating hits on an aircraft without giving them the ability to dodge fire, like you can with tracers

For the 12.7mm basically the same thing, except less accuracy and penetration penalty than 7mm when you use Tracers.
API (Cermit core) = best penetration good for ground targets and heavy armour air targets.

To keep it basic with cannons you basically have two separate types of ammo, with variations on the ammo.
AP variances and HE variances. Avoid P or 'practice' ammo, it's kinda useless. I also tend to avoid T ammo because generally the HEFI-T, or API-T ammo is better in the cannons than straight 'T' ammo. Other than that tracers on a cannon are good if you have trouble getting hits. The down side is that players can and will dodge fire when they see tracers making it harder for them to hit.

Generally the AP penetrates obviously. While HE type rounds generally dont penetrate deep, and instead explode when they hit the target. If the projectile is fragmenting, it can take out crew memebers and certain aircraft structures. Certain types are better for certain areas, and doing different types of dmg. Some ammo is better for taking out engines, while other ammo is better at taking out ailerons, for example. It gets very complicated through, as it can vary on the caliber and the nation, based on how their rounds were designed.

AP ammo pierces, I ammo lights things up, FI or HE blows stuff up

I have a stupid question that doesn't really deserve its own thread, if anybody doesn't mind answering it for me.

Are the penetrative and damage effects of projectiles, whether they be bullets or rockets, amplified by your aircraft's speed?

No.

Ok, Well generally you should go for the universial rounds you unlock, Unless the tracer rounds for your MGs is API-T, If using 20mm cannons the following are best:

Hispano - Stealth, Removes the useless 20mm T round

ShVAK - Tracer FI-T, HEF, API-T, HEF

MG151 - Air targets

To name a few.
