API/APHE follow the regular explosives.
Regular AP and ball are mostly useful for turret gunners, since they can punch through components and glass to hit the squishy meat part of the plane. They're still useful in super-high rate of fire guns like the ShVAK, though, since you can pretty much saw the enemy's wing off. And in planes with tons of guns, too. The US M2 AP round is pretty good against everything as well.
AIA is basically a tracer that goes off once you hit a target. As far as I can tell they don't do much damage at all.
The AP / APCR ammo is mainly there to be used against ground targets.
