Edit: I think the best you can do is to key bind the feature that allows you to stop the turret from rotating as you look around. This way, the barrel won't try to correct itself.
Free look camera key affects only horizontal guidance but for some godamn reason not the vertical one...
EDIT: I've just got killed again because my aim was messed up by a wooden fence FFS
The gun still moves vertically near objects regardless if free look key is pressed or not

This also happens when a enemy tank moves right up to you. If you move the barrel to point at them, then look around in 3rd person to see who else is around. When you switch back to gunner, (reload finished, repair done, etc) the barrel will move off target.
I have had all manner of objects cause my barrel to move, fences, rocks, destroyed tank hulls. The barrel seems to have a mind of its own and wants to move away from nearby objects.
I have always attributed it to the shoddy hit boxes objects have. It is very annoying.
You can switch to your machine gun then back to normal when you want to fire however you will lose horizontal turret control so this is a niche use for keeping your gun horizontal while you get onto flat ground
