Based on what you are looking for however, here is a short list of specific medium tanks I think you will enjoy, and are fairly decent as well (Tier 4 and down only):
M26 Pershing
M46 "Tiger" (Premium)
M26E1 (Premium)
T-25
T-34-100 (Premium)
T-44-122 (Premium)
Panzer IV F2
Panther D and similar
Comet 1 (Only once it has sabot)
Centurion Mk 3
Also T-34s are stupid good, like the T-34 85s and such; because of how bounce mechanics work in this game, and how rare overmatch is. Also no armor degredation or anything like that.
They have moderate firepower, good manuverability, but their defense comes from mostly luck because of their 50% chance of basically ignoring anything ever.
Tips for the grind: Premium time will help, and you shouldn't have much trouble with progression at all even in tier 3s with just premium- however if at any point you find yourself struggling, I suggest pushing to tier 4 and buying at least 2 talismans on your favorite tier 4 tanks- because they will help you with progressing from tier 4 all the way to the end of tier 5 if you want; and you can always come back to them later if any new vehicles are added you need to grind.
A tier 3 won't help you with tier 5 research though; so buy tier 3 talismans rarely.
IF you don't want to spend money, the grind from tier 4-5 is probably just flat out too much for most folks; however even if it is you are not missing much. Tier 5 is the most boring and mechanically flawed tier in the game anyways for tanks.

The Centurion is amazing too, with Sabot you can pen things you never would have even tried to before.
The american mediums have the 90mm which hits pretty hard and are some well rounded medium tanks.
The T-34s though are arguably the best medium tanks in the game, the problem is they don't really fit what you are looking for entirely- but try them anyways.

Overall; M60 is more of a solid, durable medium tank. The Leopard 1 is a very maneuverable and flank-capable tank. T-54 series are sort of in the middle, they are the least maneuverable but the 100mm is pretty decent. I have no idea about the Centurion but I don't like it personally.
Best medium tanks in the game, fast, mobile, good guns with good ammo, can bounce lot of junk that kills any other tanks.
T-34-100 after that, wont bounce as much as 85s but gun is godly and mobility is still very good. Perfect tank to grind tier 5 with.
Leopard 1 is the best medium tank in the game. Faster, more mobile, better gun with better ammo and faster reload, and I've bounced 3 consecutive Jagdtiger shots, plus a point blank T-10M shot.
Maybe once you actually manage to grind it plus HEATFS ammo. At it's BR the 85s can clean out anything on the battlefield with minimal repair and ammo costs and T-34-100 will actually earn you ton of lions instead of making you lose every penny you had.
I don't use them so try again and stop assuming. I only use sabot and get 4-8 kills every match.
