"1000/1000" is a spec that doesn't necessarily mean a whole lot. You're connecting to the internet - and it can have problems, bottlenecks, etc., that will absolutely affect your performance.
If you're connecting to your own router via wireless, in area where the wireless channels you're using are congested - that alone can cripple your throughput.
There's just too many things to list. I'd start trying to diagnose with running some tracerts (or the equivalent for your own OS) to different end points, and at different times of the day, to see if you can spot any issues.
