Where can I see how long it takes for my plane guns to jam ?

Hold down the fire button and time it in test drive lol (no place that I know of in game)

Also, your targeting sight will start to fill up with red, starting from the 12 o' clock and moving clockwise. I try to avoid going past the 7-8 o'clock personally, though I'm not sure if that's ideal from a game mechanics perspective. I think overheating reduces accuracy on most guns, btw.

As long as you avoid sustaining fire, you shouldn’t jam. Fire in steady bursts. You should never really need to be firing for long enough bursts to overheat. Besides jamming, it’s ineffective use of ammo as well as a major energy drain. Ever see players fire off their guns while landing? Your guns function as a mini-brake and slow you down.

Guns only start jamming once that circle is full. At that point it's based on roll everytime it fires against your crews Weapon Maintenance skill and whether or not you have the gun mods.
