Always go for the belts with all/the most HEF or HEI or HE whatever, HE is best against planes since think about this.
Most planes don't have very durable airframes, so hitting them with a 20mm high explosive shell? That's like putting C4 against a door, it's not gonna survive. Hispanos in particular are very good with the air targets since they have lots of high explosive. Another good 20mm cannon is the MG151, with the minengeschoss (air targets) shells, and those can absolutely rape planes, look at the G.55 Serie 1 and later Fw 190s for example.
So to conclude, if there's an air targets belt, it's usually the best belt for the plane as far as air combat, but usually the stealth belt offers the same ammo type but without the tracer on it.
