How to counter Boom and Zoomers?
I know to turn into them in order to give them a hard angle, but how do I bleed their alt, and then get guns on target?

Either continually turning out of attacks to make them climb and re-engage. Every climb they do bleeds more energy, or, especially in aircraft like Fw 190s or aircraft with low stall speeds, try to get them in a rolling scissors. You'd have superior roll rate and/or slower stall speed, and can bleed their energy so they can't climb away.

if they are stupid enough to try and follow you a defensive spiral could work though it saps what energy you have too so you better be in the superior turnfighter

Patience. If they dont want to play your game it will take time to slowly bleed their energy. But eventually each failed attack of theirs gets you closer.
Not much you can do but play the long game and focus on avoiding their dives.

stay fast and don't maneouver more then you need too. if you can stay fast and dodge without rolling to much you can get guns on for a few seconds while they climb or extend. you may not put them down but they will get some rounds into them.

understand energy state and the maneuverbility at different speed.
most planes (with the exception of P-51Ds and some heavy fighters) compress a lot at high speed. It reduces their maneuverbility when they are about to reach you in a BnZ. Especially the rudder. If you turn into them, most of the times they won't follow. Or pitch your nose down and do negative G maneuvers.
Of course if you overdo it, you'll lose a lot more energy then they do. If they are already at an energy advantage, the best thing you can do is either
1. abuse them slowly so they lose energy and you gain until you come to about the same energy state. This can only be done if 1. the pilot is not experienced enough. 2. your plane has a much better engine (having more horse power, or a better radiator).
2. run to friendlies.

dont necisarily need a better engine, a shallow dive to hit max speed and then leveling out and extending, maybe entering a shallow climb if you gain enough distance, and again shallow diving to hit topspeed if they get too close will eventually equalize your energy with a pursuer. just so long as your ripspeed isnt significantly lower and you dont bleed your dive energy too quickly

First of all you look tasty. Here is an nice counter maneuver (RB) against Bnz planes takes a little pratice to pull of. I would recommend to use the enemy tracking camera in the progress - lock the target than press your tracking camera key so you can manouver with mouse/keys and focus at your enemy.

Starts around 11min https://www.youtube.com/watch?v=Rc7Q36lztlU works in pretty much every plane your enemy must have an massive energy advantage.

If i remember correctly you also asked a while ago what to do against good climbing aircrafts like the 109 if you flying us planes and you have the same energy state.

Here is an idea - in low tiers do an chandell / cork screw in higher tiers do a simple chandell (at 4. min )
