Use speed, rely on the relatively bouncy nature of the mantlet/turret front, and you'll do all right.
The guns/ammo are the same, which means that really the only things it's going to struggle with are things it cant physically penetrate.
At such a low tier, those tanks are going to be fairly uncommon... My guess is you're either just having a string of bad games with the M5 and are associating it as a bad tank... Or you're trying to play with bad ping and the server registers the hit elsewhere than you thought you were aiming, or despite knowing where to aim made a few shots that were off by a slim margin that was just enough to cause them to bounce.
Net result: M3 is a champ, M5 can go throw itself off a pier.

OP Pz IIIs have APHE shells, the U.S. tree doesn't get those until br 2.7 with the M3 Lee. These shells are able to reliably one shot vehicles at that tier because they have explosive filler.
