With the hellcat, you can actually dogfight with bf-109s. And these bf109s will if they're stupid, cause they don't expect a giant hellcat to outturn their nimble aircraft. The hellcat has giant wings that create a lot of lift and the rudder gives good control. If you stall to around 220 km/h and pop combat flaps, you will turn on a bf109 very fast. It is also quite durable compared to the mustang. But, it has early 50 cals with no API-T rounds. If you play ground RB, then the hellcat is probably better as it also has a good payload. MEC is also good for the hellcat as it has 3 supercharger levels. It is more sluggish than the mustang however.
The mustang gets 20mm but it doesn't turnfight as well. You'll have to maintain your speed with the mustang and BnZ. But the rollrate and control stiffening is more forgiving compared to the hellcat.
I don't know much about the Mustang, hasn't much ammo, a little slower, no payload, probably roughly the same climb speed and turn time, hispano MkIIs aren't very good, and it's a little bit more expensive. I'm sorry I can't offer a detailed comparison, but I'm just saying I'm enjoying the hellcat, its a very nice little plane.

You could argue that you should take the 20mm Mk1 Stang over the .50 cals, but I rather enjoy accurately blasting a 109/190/Yak/La/A6M5 etc. from 1km away.
