Is there a way to turn off auto-level out plane?

Flying the planes is really annoying when it goes to auto level out every time you turn, is there a way to turn this auto off? you cant do anything smoothly when its like this.

Also by default when using a controller how do you free-look around? or do i need to reconfig my controller?

its the instructor doing it, turn off mouse aiming. also turn off auto pilot for gunners and bombing reticule so auto pilot doesnt do weird things while your bombing/gunning
