What does the "Sense of flight" option do?
I've noticed it in settings some time ago but didn't really know what it did. Currently by default it's at 50%

No, they have seperate sensativity setting for that. Sense of flight only affects first person cockpit view on how much the camera moves around when you make any movements with the aircraft. Max it out and it almost makes me sick (and it's rare for me to get motion sickness).

Huh. Will it help me better if I set it to 0%?

It's really down to personal preference. The only time you notice it is in first person, so if you don't fly first person much, then there is little reason even bother. If you fly first person or SB more often, then hop into a test flight with any aircraft, and slowly adjust to your liking. I personally just leave it at 50%.
