Seafire vs Spitfire ?
Not sure what to research to be honest... Can you guys help me out ?

Depends if your doing GRB or ARB/AAB.

ARB and AAB I'd just do the standard Spitfire line, for GRB Seafires are good.

I can't recall if there is any significant difference other than ability to carry bombs/unguided rockets and land on carriers. I haven't looked in a while.

the most significant difference is the seafire fr47s contra-rotating props which make it a lot easier to fly in sim, doesnt do anything for realistic or arcade though where the game stabilises the aircraft for you
