Locking on to a target will only in arcade mode remove most of the need to readjust. Distance control will be automatic there, but you still need to lead the target if either it or you move sideways. In realistic mode you will also need to set the distance yourself if the target is moving away or towards you. Locking on to a target then only serves to set your cannons to the original distance estimated at that time and you just go from there then.
You should work on learning how to shoot and guide your ship at the same time.
If you're not interested in manually shooting yourself then it may be worth trying out a different game.
But yeah, shooting is unsurprisingly a fairly large part of this game (regardless of which branch of the military you go for), so you may want to get better at it if you intend to keep playing.
