Having trouble dodging excelsus's attacks

I do ninja run but also manage to get hit most of the time, and parrying against it chips away at your health.

Offensive Defensive (basically dodge) works best for overhead attacks. Parry isn't viable since a decent chunk of the damage goes through.

For swiping attacks, the double one can be "dodged" by using Ninja Run (Raiden will dive through the blades, you only need to sprint). Single-blade swipes can be dodged by jumping.

Let Excelsus kill the fodder it summons. Dodging the laser is fairly easy anyway.

-when he's about to attack with "double blade overhead" attack. mostly left blade is going to hit you. I recommend you to ninja run then slide to the left when he swings his blades.
-on single blade swings, always run to the opposite way. it cant reach you for obvious reasons :D
-attacking his legs is little bit tricky. it always follows you, so well timing offensive defensive is the only way to dodge it.

for the legs, theres a spot on the ground where the legs cant reach, its in the corners, thats how i dodged those, and just slide alot from what i did

You almost always can use offence defence to fully ignore damage/hit, the only thing i not sure aobut is plasma cutters attack, but in this moment oyu just run and make sure that it will hit bipedal things so you won't had to cut em yourself

I have used ninja run but Raiden never dives through the blades I can avoid the single blade one easily enough but that one always hits me for some stupid reason
