If you just keep your distance from him and wait for the long attacks it's much easier. I was spammimg him with attacks after ever dodge and also staying pretty close. Not a good idea.
Especially when he does the double-sword attack I got raped so bad. If you keep your distance and walk in a backwards diagonal motion you can avoid most attacks surprisingly easy, and then move in for the attack when he's doing the big wind-up style of moves.
Hope that helps a little.
Another trick is to sprint up to him right after the checkpoint is loaded. I could get about 8 hits in and get a head start before he did anything. It's a little cheap but I don't care.
One problem with the final battle is the bad hit detection. Some of his attacks do damage when the animations don't even show them hitting me. I'm not talking about collateral damage from the ground shaking, fire, or anything like that. Some of the basic sword/claw attacks "hit" me even when they don't.
It's also annoying when I botch a quick-time/execution/cinematic event and have to redo a section of a battle.

I don't know if I have the patience to do it on Paladin but we'll see if I finish the later chapters on that to begin with.
