This is probably the sort thing that Training Mode would be more useful for than its own separate mode, because proper DI changes for every single move, by character weight, fall speed, and percent, and there isn't always an objectively correct input (i.e. it can be reacted to either way, or it's a 50/50 situation). So a minigame where you can practice situations and get them "right" or "wrong" would probably be exclusively limited to survival DI, or maybe very specific strings like Kragg repeatedly throwing rock, or Wrastor fair chains.
There will definitely be DI instructions (both combo DI and survival DI) when they finally do the other defensive tutorials, since there were in Rivals 1 (in fact, you could go back and play the ones in Rivals 1 if you wanted, when the game is on sale few a few dollars maybe). And there are planned improvements to training mode to have the AI repeat a series of inputs you record. For anything else, you're probably best off posting on the Nolt board (https://rivals2.com/nolt) with a specific idea of what you'd like to see.
