Those are my recommended items. Out of your list of items. Don't bring a sewing kit. It really is not worthwhile as they are pretty easy to make and the fifth chapter is the final push to the end. Dapper vest is okay but you cannot wear a back pack while the vest is equiped, which limits your available carry space. Pan flute is handy. From my recommended list, i would probably exchange the hat for the pan flute due to the honey hams also giving you a decent sanity boost.

Still, the final chapter is really a speed run. sanity should be the least of your worries since you are rushing through the world as quickly as you can. miners hat is a must :)
Regarding the red gems, dig graves is probably the quickest way, but be warned! digging graves costs sanity also does not gaurentee red gems. another way is waiting for summer and killing fire hounds. another way is to go into the caves and mine cave rocks. another, which is probably the worst, is to open tumble weeds in the desert. sometimes when you are lucky and exploring, there will be a fire staff amongst sleeping fire hounds. when picking up the staff the hounds will wake up and attack you. One final way is to find the savana in the world with lots of beefalo and there can sometimes be a wooden wall maze. in the middle of the maze is a free fire staff. be warned, do not open the chest by the maze until you have collected the stuff from the middle of the maze. there is a chance that the chest sets itself on fire and burns everything.
As for tips. I disagree that walking cane is cruicial. More important it having food and sanity restoring supplies, miner hat and fireflies to refuel miner hat, alternative you can bring web and craft bug net to catch fireflies in your way
I think, what you should have done is crafted log suit and always kept it on to be safe for any surprises or hard obstacles
For sanity: stack of jerky would be best for both hunger, sanity and health. If it's too difficult then try bring stack of green or blue mushrooms and cook when you need to restore sanity.
If food is more important for you than sanity then always pick flowers whenever you see them to keep sanity in check and use shovel to dig up mushrooms. You will get 2 from digging them out instead 1 when picking them up
Keep in mind that there will be obelisk blockade that would require low or high sanity in order pass. (One of reasons why I find Darkness and King of WInter to be the hardest, due to those stupid obelisks)
For clockwork situation - try lure horse or rock away from the rest to 1vs1, but you need to lure far enough so other clockworks didn't see you. And then finish bishops. You could also try use rock to destroy his own clockwork friends.
I just got that a massive chess biome today in Darkness chapter! With ocassional rocky biomes. The entrance to biome was heavily guarded in narrow bridge. Oh boy that was indeed a very difficult area! I was looking at edges of my flashlight light and keeping ears on for any clockworks to avoid any contact while moving my way through there very slowly like on land mine field . Wearing headphones can actualy help determine from which direction sound is comming
I can see why you struggling in there. Never go there with out armour and pray RNG for clockworks placement would not screw you there.
