I can surely see how the "wild nature" of the Tallbird could overcome its affection for me. It makes sense, but i thought it was so frustrating to see it become hostile after so many days of self sacrifice to raise it.
I am not an expert or anything, but there are cases of grown lions and tigers that became reasonable domesticated, right?
And it does make sense that it stops following you after he is fully grow, just like pokemonprime said. It is the natural order of the things.
Maybe if he just stopped following you and not being hostile would be a nice change. Just like the mod for agressiveness, but without the mod and this would change only the behavior of the domesticated tall birds, not the wild ones. After all, you just leave your mother house, you don't start to hate her (at least, not most of the time)!
