As for the clothes, all I can suggest is that you can set up a fire pit/camp fire near the beefalo and shave them (at night!) to make yourself a hat. Just beware of Beefalo mating season.
And yes, if the Deerclops comes I highly suggest you run away. :p
Anyway, I'm guessing player planted berry bushes (or any plant for that matter) do not work during Winter? It's had plenty of time and nothing.
Each dry meat restores 10 sanity. And for cold, the suggestions giving in this thread are great plus dont forget the new Dress item Rabbit Earmuffs if you cant get the Beefalo Hat in time, I survive my first winter with the Earmuffs and the Heat Stone alone... I dont recommend it though.
If you can kill the Treeguard without him hitting you, its the same thing with the Deerclops. Force him into the attack animation, retreat then go back and hit him for a couple of times, rinse and repeat.

Also i suggest setting up camp close to rabbits holes so you can catch them as a winter food resurce.
Then dry the meat or if you find barries/monster meat then make kebabs. It helps a lot more with your hunger and restores sanity aswell.
Oh yeah and with spiders just set up traps next to there home.
planted bushes gives berries if you fertilize it.
