When they interact with evil flowers they make more of them... Yeah... Flowers and butterflies are kinda the same species in the Don't Starve world... Yup... Kinda bonkers... XD

Are you sure it isn't the full moon thing? Don't all the flowers become evil every full moon...? :P (in RoG) Same with the big ol mushroom
Its got nothing to do with the butterflies- its just a RoG feature you were unaware of, if I'm right >:3
Actually interbreeding was a thing even before the expansion... Even during early access... Yeah...
The inbreeding thing would take more than 12 days to have such a dynamic effect- so the butterfly thing is irrelevent...
Edit: When I think about it Evil/Normal flower spread reminds me a lot of how corruption works in Terraria! XD
Second Edit: A quick wiki search and it turns out that you guys are right about the fullmoon effect in RoG. There is now also a spring effect where they spawn naturally with no butterflies needed. Oh, I also forgot to mention that bees are a part of that cycle just like in real life! How silly of me! :P
Third Edit after even more researching: And would you know... The bees are ultimately responsible for "planting" new flowers off screen when you are not looking. And here I always assumed that the butterflies planted themselves automatically. Logical thing to assume when you can plant them manually, but hey... Easy mistake to make. So yeah, got bees around your evil flower den?
I did notice that some of the naturally spawned evil flowers has increased over time, as you said, most probably to the bee hive's around here. Fullmoon effect is the answer then, as most of the flowers that I saw that were evil had gone away by dawn or had turned back to regular flowers.
