The big difference, that's you have to choice between base game and Reign of Giants, RoG is harder but not impossible for beginners.

Btw I have a little firepit near the beefalo and an alchemy machine but what I don't understand is what to do now. I don't see anymore research options or crafting recipes to unlock.
Prepare for winter. Try to invest in warm clothing and a thermal stone.
You may also want to go to world settings and ensure you start in Autumn if you're SUPER new. Spring is way harder.
Create the prestihatitator, or whatever it's called, the porkihatitator. It has magic recipes you can prototype. If you're looking for places to explore, find a sinkhole, it has an expansive underground world.
Starting in a regular world with SW and Hamlet enabled is what I'd do, so that's correct. Shiprwrecked is more difficult, and Hamlet can be outright brutal so play and gather your skill.
As others said: RoG with Hamlet compatibility. It means "include everything".
Though most likely you will spend most of your time in RoG. Shipwrecked is when you want something new and Hamlet is like more new end-game. All three are awesome.

All starts are viable and fun, but for Total Beginner you probably should stick to the RoG for some time. Some people say it is better to start from Shipwrecked after a while.
Use wiki, it is kind of game that is ok with this.
All 3 are different distinct worlds and need special knowledge to learn from.
Actually starting with shipwrecked can be a very relaxing experience, and when you mastered SW the classic DS or RoG might seem too easy for you?
Each DLC has early, mid & endgame and specific obstacles to overcome including bosses.
Some might even find Hamlet a nice newcomer experience as long as players understand to game the Oinc! economy. As soon as you start to be rich the game gets alot more layed back!

In Classic DS:
Dying to Charlie 24/7
First you will die to Night, Treeguard boss, Spider queen boss, Cave Darkness, Winter, Deerclops giant
RoG: Gets harder with maybe death to Wetness & the almighty Dragonfly
SW: First starving or drowning from island to island. Then dying most likely to Sealnado giant, Then ultimatelly @ endgame dying to dry season & Vulcano
Hamlet: Dying to basically any enemies, which chase you down i.e. poisonous scoprions, village pig guards, bugs
Then more experienced you might likely die to the Pugalisk boss or Hayfever season
Later maybe finding a way into the poisonous jungle as well
GL on either choice, DS + DLC has alot of meat and i'm sure it might entertain you for 300H+ to come.
