I'd try tediously luring one away from the others to kill it, using an attack once and dodge pattern because I'm not fast enough for two attacks. But you don't have much experience and tallbird flocks are a pretty dangerous way to learn kiting. Maybe practice kiting with something easier first, like small groups of spiders, or maybe tentacles? Tentacles are about equivalent to tallbirds that can't chase you or gang up on you, which is to say, bring armor, pay attention and move fast or they'll kill you quickly. Oh, and you'll need good options for healing, so be sure to get a bird cage and crock pot first.
Wait for spring and pray for frogs isn't much of an answer if you want the eggs now. Nor is the weatherpain, for similar reasons. They'd definitely work, though, but they aren't options on day 7. Frogs are also a dangerous technique. Unfortunately, these options also aren't easy to repeat, so they're not great for farming.
Pigs with football helmets would be time consuming to set up, expensive in terms of pig skin, and I'm just not that confident in pigs. Plus they'll eat some of the meat. At least it works in all seasons and can be repeated... sort of.
Go to the caves, hammer some bunny hutches, and build new ones near the tallbirds while they sleep. Takes a bit of time to set up, but you should have a few eggs by winter. An excellent option for farming, since the bunnies do all the work, don't eat the spoils and respawn every night, plus you get items from the bunnies. But it's risky because you'd just be replacing the tallbirds with an army of bloodthirsty vegans. Definitely not a place to hang out after dark.
Last thing I can think of, safer and cheaper than the bunny thing, is go to the cave and get a large group of rock lobsters. Problem is, they may wind up overpopulating in the rocky biome. It's apparently not as bad as it used to be, but I'm still afraid to try it out.
Oh, one more idea: build a lightning rod nearby, maybe while they sleep, then zap the tallbirds away with a telelocator staff. The best part is, I don't think the parents will respawn at the nest in a couple days since they aren't actually dead. The bad part is, they won't lay any new eggs, and, uh, you might run into angry tallbirds scattered all over the world.
Bunnymen and run like heck before dusk hits is probably the best bet. Also, make a meat effigy ASAP or wear a life giving amulet when gathering the spoils, just in case.

Pig runs in to attack bird.
Two fight.
Grab egg.
Run.
One tallbird is easy-peasy. Dodge a peck, get one hit in, run away until they peck again and go back in for a hit.
If you can, run away in a slight curving motion so you stick close enough to the bird to have it peck but not hit you.
