2) Double click "Chivalry: Medieval Warfare" on left.
3) Choose "Play Chivalry: Deadliest Warrior" from the list in the popup.
CDW should then start.

You don't launch the dedicated server as that is for hosting your own games, not playing the game.
Unfortunately, I don't think anyone is playing CDW anymore, though. You can still start offline maps and add some bots, but it's not quite the same as real people.

The game is dead in the sense that no-one is playing regularly, but I just showed above how you can still have some fun playing with bots on your own. Also, if a couple of friends wanted to play together they could still join a server and duel for example.
I definitely wouldn't recommend buying CDW at this point in time, though. It was fun while it lasted.
I think the command is addbotsteamclass
You enter a few numbers after that. Things like how many bots, which team, which class,
Instructions pop up if you start typing the command.
Walk up to the wall in the courtyard where those two guys are just standing outside. Press E.
First hidden room has 2 enemies. Next has 3. Next has 5. Next has tons.
If you want to change class, hit the M key before you go in the hidden area.
