When it comes to blunt weapons, DING DONG.
Best not knife melee weapon i'd say bat for knockdown or machete for dmg.
If I'm going loud from the start though, nothing beats the fire axe since the damage is almost good enough to use it when I need to reload but don't have the time.
I know you're talking about the knives, they're all pretty much the same in stats. None of them deal enough damage to matter, so they're mostly useful when charged up. For this reason, I'd pick the Trautman Knife. It deals the most damage when charged up and might be able to one-shot regular cops.
My personal choice, though, goes to the Fire Axe. It's a VERY slow weapon in every regard so you don't want to miss, but it deals enough damage even non-charged-up to take out everything short of a Special Cop. That makes it very good because it's useful in taking down errant enemies who surprise you mid-reload.
The only other reason I'd use a melee weapon for is knockback. For this, I'm torn between the Lucille Baseball Bat (the barb wire bat) because it does a tremendous amount of knockback uncharged, and the Ding Dong Breaching Tool (the warhammer) because it deals the most knockback damage you'll ever see when charged up. Both of those can ragdoll cops if used right, but they don't do enough damage to one-shot everybody.
Frankly, Knives are only really useful for stealth anyway. Their stats are awful but they're concealable while still giving you a decent punch if you get the drop on the guards. Which one you pick kind of depends on your level and whether you want to charge up your shots or not.
