you get humanity when killing hollow enemies
Where did you read that?
The other two gentlemen are correct. There is a hidden soul "table" that awards soft humanity to the player once he/she accumulates a certain amount of souls from killed enemies, but only if the area boss is still alive. It is fairly easy to get the first soft humanity, but it takes more and more souls to get each additional humanity up to a maximum of 10 per area.
based on my experience, i get soft humanities when i killed undead merchant ,hollow soldiers,balder knighs,heavy knights,necromancers,butchers,bloated heads. all of them are hollows and has red eyes

well i still got soft humanity from bloated head when manus is dead already
i never had that much trouble on any boss since the capra demon...(just finished seath the scaleless) and i still get humanities from time to time but never as much as i got in that first part of the game. probably because i have not been getting stuck in the areas the way i was stuck in undead burg
