Also, remember the "better" armour is heavier, and slows you down more than the "worse" armour.
This might sound silly, but the best defence in Dark Souls is not being hit in the first place. You can waddle around in heaviest armour you own, and at the early part of the game it will probably work (hint: at the early part of the game everything works) but try fighting with only 25% equip load and see how much faster you can move/roll. If something breathes fire in your direction, do you want to stand there in the heavy armour with your shield up, hoping to get in a swing when it's done roasting you? Or would you rather quickly evade the flames with your light armour taking no damage, then run up to his side and swing risk-free?
