Don't think there any tutorials or guides out there for it specifically but texture creation is the same across the board for Source.
The quick and dirty guide:
VTF = Valve Texture Format. This is the actual texture you see in game, on models, hammer, etc. VTF's must be a power of 2.
VMT = Valve Material Type. This is what defines the material itself, e.g. is it a rock, what kind of shader to use, what VTF to use, bump map, etc
TopHATTwaffle has a video that goes over texture creation
https://www.tophattwaffle.com/hammer-tutorial-v2-series-13-creating-custom-textures-normals-vmts-packing-a-levels-content/
Watch that then look at the tool and you will see it's basically the same exact thing just cleaned up and with more features.
