Does anyone know how to mod inventory?
Is there a way to increase stack size for for example food, or potions?

I think you can try editing items .qtc files or find some general info about stacks, use GCFScape.
If you are playing vanilla, some food can stack over 20, up to 50 or so. You can also stack every potion to 21. You need to have 2 potions on the ground near you, and 19 potions in your inventory, simply collect both of these potions really fast and you will have 21 potions in your inventory. It might work with more potions, but I have never tried. As for scrolls, their stack is unlimited for the base game.

Where do i get those files, and do i need pack them backl or game have special folder for mod files?

You should use this guide to install mods: https://steamcommunity.com/sharedfiles/filedetails/?id=227519868

As I said earlier, use GCFScape, go to the "vpks" folder and find the right vpk file, they usually go with _dir thingie. Then, find the right vpk, extract files, these might be items' .qtc or some kind of inventory or anything else, I can't remember really. After you extract these files, modify them and use the guide above to install them correctly.

Are you sure about qtc? I checked all the vpk's and did not find even one of those files.

Nope, it might be some game_settings.txt file or anything else. I don't think it's hardcoded in a way that you can't change the value of items' stack. I guess you will have to find it yourself, because I tried to find it an hour ago myself, but no luck.
To be fair, I'm not sure why would you need to change stack size, since it exists on purpose, but if you manage to find it, please share your findings here, it might help others.

Well i found mana_potion.qct but sadly there is no quantity values, inside.

Yeah, also checked it. From what I remember Ultimate Edition mod fixed some bugs concerning items' stacking. I also checked it, but no luck. I guess it's somewhere deep, I will take a look at my mod config, maybe I will find something there.

It is a file with all world entities like doors, items, throw-able rocks, ect. Maybe there is settings for it somewhere, but it would not suprise me if all inventory - related things is just baked in server/client dll, or exe itself.

Doubt that, honestly. Most of the stuff is located in .qtc files and so on. Maybe you can find something inventory-related though.
