Electric baton guys - jump over and hit them in the back.
Electrified enemies - batclaw removes charge, also you can just REC them.
I disagree about combat system being bad. Maybe this game doesn't explain moves much. If you played Arkham City before you'd be more prepared. You can go to Waynetech upgrade menu, it lists all the moves available for you.
I am no veteran but I can share some methods.

Focus is out of the question, all the time you'll be fighting with these design flaws, the actual fighting is not that hard even in knightmare. But if you want focus then I suggest you try a beatdown. But doing it in a global and effective scale will be very challenging.
1. Shield guys : I would suggest a disarm and destroy technique if you have it. If you don't have the ability then you can do what MASTAN suggested. You can use a remap for single press.
2. Electric Stun Sticks : You can disable 'em before entering the fighting area(if doable) with a disruptor. You can use the Rec to temporarily make the thug lose the stick. They can pick it up eventually. The most basic move is what MASTAN suggested, in case you don't have the upgrades.
3. Electrified enemies : This type of enemies can be dealt with a quickfire REC(double tap 4 by default)/batclaw. But they'll keep on coming unless you disable the source, a doctor henchman. You can disable these doctor henchmen's electrocuting gadgets with the disruptor before you enter the fighting area(most of the time). So, you can totally avoid electrocuted guys. This is not applicable for the arcade challenges though. In campaign you won't find more than 4 of these guys, cuz you're given a max of 4 disruptor bullets, which is more than enough.
Although I suggest you try quickfire technique more.
But I also want you to inform that if you can make use of the Critical Beatdown, Counters, Throw Counters and a few batarangs then you won't have to use any of these, at least for the campaign and you won't have to deal with thousands of pesky gadget and special takedown controls or, you can try remapping.
The only games I've ever played with a keyboard are MMO's, where you legitimately need all the keys.
