Do rats count as my kill if I....
... Let them out by opening a door they were behind?
Such as in Dr. Galvani's pantry. I open the door to loot the pantry, there are rats inside. I am trying not to kill anyone or be spotted, on hardest difficulty, so I leave as many guards alone as I can, so I don't risk them dying after I knock them out, by rats eating them, or having their body be discovered somehow. There are 3 guards patrolling around down there. I had to choke out 1 of them, but left the other 2 alone, as I didn't need to go near them. But the rats ate them when I went into the pantry.
Will this go against my no-kills score?
If so, I will go back to an earlier save and leave the pantry alone.
But I am also trying to find all the loot. I want to know how in many levels I end up missing over 1,000 coin, when I scour every corner of the map I can think of and either loot bodies or pickpocket everyone I see carrying coin.

Yes if any unconscious humans die 'accidentally' or by other means such as getting eaten by rat swarms or say drowning for example the game will make you responsible. ANY in direct deaths will count, the characters you knock out must remian alive through the play-through.
But what about characters that are awake and walking around, but die because I let rats out from behind a closed door?
They do die as a result of my actions, but I don't go near them, touch them, or affect them in any way.
I am asking specifically about that one area in level 1, in Galvani's pantry.
I want to loot the room, the guards are awake and alert (the one I knocked out is in another room with the door closed, so the rats can't get at him), but die when I try to go into the pantry, because the rats swarm out as soon as I open the door, and eat them

I'm afraid I don't know the answer to your question but alternatively you could always kill-off the rats to ensure they don't eat anyone.
I think the guards will hear me if I kill them with my sword. I don't have anything else to kil them with other than explosive bolts for the crossbow, as I am trying for no powers other than blink as well.

I finished the Overseer mission last weekend. I don't know what is the difference between easy (as I play) and very hard (as you play) when it comes to stealthy gameplay, but I managed to choke all the guards on that floor without much problem. Then I just killed the rats. Try again to see if you can choke all the guards. If you can't manage to choke them, do you at least have any sleeping darts on you?
I just don't want to interfere with them, as if you choke them out there is a chance something could happen to them whilst out cold. They could get eaten by rats or something, and you can end up with a kill without having any idea how it happened.
I have lost too many of these people in missions, where I know for a fact I killed nobody, but there is 1 kill there because I must have left someone asleep somewhere and something happened to them. Either rats, or a fight breaks out nearby and they take damage from an explosion or gunfire or something, or even they just slip off of something you leave them on and die from the fall.
And this seems to happen even after you leave the area, or at least are too far away to be able to see or hear what happens.
So I am trying to leave as many guards standing as possible.
I also find it a nice challenge to make my way around areas without touching the guards, then sneaking back out whislt they are still patrolling.
That's why I only took out that 1 guard downstairs, and 1 upstairs, leaving the other 2 guards and maid (who I pickpocket for the key) walking around for me to watch out for

Well, the guards will only be eaten by a swarm of rats. And if this is such a problem, put 'em up high. Where noone will seem them and rats can't attack 'em. I mean atop boxes or on a ceiling light.
Nobody seems to understand.
I am talking about awake guards, walking around. If they get killed by rats, that I have let out from behind a closed/locked door, will this count as a kill?
It seriously would have been quicker to finish the level after trying it than have to keep explaining it. Sorry, but I thought I made it clear enough.
I know it counts as a kill if the guard is unconscious by my doing and gets eaten. But what about if they are still awake/alive, and walking around.
Same goes for the sick hound in the kennels. If I let him out he kills a guard. Is that MY kill?

Supposedly http://steamcommunity.com/app/205100/discussions/0/828925849335634209/ -- in a similar situation, opening a door that unleashes rats does count as a kill for you even if you did nothing to the victim prior to opening that door.

Rats count if the action is caused by you, if they are behind a door and you let them out whatever they do is on you.
Even random rats will count against you if you've interacted with the character, whether it be combat or knocking them out.
When doing non-lethal always take the enemies you knock out and lie them on top of something, anything that's off the ground.
If, for any reason, you must release rats or weepers make sure you have everybody knocked out and hidden safely or that you take care of them before they kill anybody.

Such as using a Trip-Razor to kill the pack of rats. And you should knock them out in general.

I know this is old, but I happened upon this thread and had to mention, in Dr. Galvani's house you can pile all the bodies on his bed, no need leaving guards walking around. Outside dumpsters and flat roof tops are great as well. Anywhere out of sight and off the ground is good. Also if I keep taking out guards and have quite a pile some start to disappear anyways.

Did you even read the rest of his comments? Its not that he CAN'T knock them and keep them away from the rats its that he doesn't want to knock them out. Oh and btw for all future lookers on this thread as long as the guards are awake rats killing them doesn't count as a kill.

Rats don't count - even if they're your own?

Think about first mission, rats kill 2 guards while you crawl above them. This doesn't count as you killing them.

Rates eating unconcious NPCs does count as you killing them.

I'm not sure about if you let them out of a room and they kill someone though.
