I have to go Dishonored. Assassin's Creed as a whole is okay but they never really succeeded in being a good stealth game in my opinion.

I agree. They have a lot more focus on the flow of movement and combat than the stealth aspects. Yes, they have stealth in them but it's quite a simplistic implementation - even in the later games.

Don't compare Assassins with Dishonored. They are different gameplay.

The two games also differ between first and third person stealth, both of which perspectives feel a lot different to each other so it's difficult to compare

Dishonored is more stealthy

Assassin's Creed isn't really a stealth game. It has stealth elements. Don't compare Dishonored with AC.

I think a better comparison would be dishonored vs Hitman (at least the older titles). I've only played blood money but the two bear striking resemblance in terms of game mechanics. Open map layouts, alternate paths to take, the choice to kill vs subdue your targets, hiding bodies, sneaking past vs. guns-a-blazing, etc... The AI was laughably bad in blood money so i was relieved to find enemy perception to be slightly more believable in dishonored albeit i breezed through it without killing anyone on very hard difficulty while I struggled with blood money on normal difficulty. The older Hitman titles will definitely give you a run for your money considering you can't blink around all over the damn place.

You can choose to go nonlethal in Hitman? You must be referring to normal lackeys right? I don't think you're allowed to take out primary targets in Hitman nonlethally unlike in Dishonored wherein you can have non-fatal ways of taking out primary targets.

If I'm remembering correctly, a few primary targets could be optionally knocked out. Don't quote me on this one though

dishonored is a real stealth game with rewarding or punishing consequences. AC isnt much of a comparison, its casual and boring at its stealth mechanics

I love assassins creed games you can tell by my play times in them but you gotta give the point for stealth to dishonered. This game also has a huge difference in gameplay between experienced player and newcomer. To be honest I am 7 hours in and I am not that good but in youtube you can see how people use all that skills and get some mad kills.
Assassins creed doesnt even botherwith stealth now but dishonered forces you to be stealth because it punishes you for getting into combat.
