Welcome to where I was a week ago OP.
As in disgruntled as my Soldiers don't have helmets, and I cannot customize their color.
Luckily $4.99 later, and I can. Total ♥♥♥♥♥♥♥♥, but w/e.
Its not game-changing in any way, so you are not required to spend the money if you think that is too high of a cost for pixels.
As I am not an incomeless child, $5.00 is no biggie. But to some, it is still too much.
But yeah, if I ever meet Jake Solomon or anyone else at Firaxis I will probably punch them in the juggular for not just including this in the game at launch and giving pre-orders something else.
You can turn on color customization by editing XComGame.ini (in your XCOM folder under My Documents\My Games) and adding the following lines at the end:
[XComStrategyGame.XGCustomizeUI]
bArmorDecoAvailable=true
bArmorTintAvailable=true
This doesn't activate the preorder armor models, but it does give you the ability to change colors. Why they didn't include it in the first place is beyond me.

I would advice against developing any sort of attachment to any of them.
Mark your Psi guys, mark the guy with the arc thrower, whatever.
It can help. It's worth the INI tweak. It's not worth $5.
We all know there are many!
