one I give them body shield so they get another -20 and two I don't leave them tanking 4+ Dudes. Damage control, Absorption fields. they can take like 8 hits. Assume a guy doing lets say infinite damage 10.
the MEC has 10 HP. it gets reduced to 3. then the damage control reduces the next 6 hits to 1. and on the 8th hit it would die. and at any time a savior medkit could restore it to full health.

Carrying forward, the MEC has 20 hp, the damage gets reduced to 7, 5 on each following hit, it takes 4 hits. still plenty but you probably should bring plenty of arc throwers to repair it
equip him with that grenade launcher, if trigger alien try to use bomb to blow up their cover, and let your crew clear everything
but if can't, just back up 1 turn, hide MEC out of the way (for 1 turn), set up a party of overwatch and let them come to you
I "NEVER" have my MEC die (i always build kinda tanky MEC btw, pick up every defensive promotion, that should help)
There is such a thing as overextending, though.
