Im new in Modding so it's like a maze for me, and I dont know where i can get those mods, how to install them and which ones are the right ones.

Modding is a lot easyer than it was 10 yrs ago,
the advent of self installers has made it very easy.

XCOM EU/EW isn't really setup to be modded. Some enterprising people figured out how to hack the scripts that form the game, and so there's mods to the game that consist of literally changing the files the scripts get compiled into, which is pretty different than how mod systems like steam workshop work.

Your best bet for XCOM EU/EW mods is at the Nexus, http://www.nexusmods.com/xcom/?

You will find pretty much anything that's available there, and usually with directions on how to install it. At this point many of them are contingent on you having installed the "Long War" mod which is more of an expansion than a mod at this point.
