Check out the "Long War" mod for this game, note that it does require the Expansion (Enemy Within) to play which I'd recommend buying regardless as it adds a lot of nifty stuff to the game. I'd also Recomend playing the game vanilla once or twice as it is certainly a good experience and of course if you're an achievement hunter at all it is worth noting that the steam achievements were not in mind of the Mod devs of long war so I'd grab those when playing the vanilla version.
The Long War mod can be found on NexusMods --> https://www.nexusmods.com/xcom/mods/88/
There's also a wiki page for the mod which is certainly a very useful tool -->

Hope this helps, and enjoy!
havent tried it personally, I would just play long war and then edit the ini myself to make it the most fun.
Xcom Enemy Unknown / Enemy Within was made to be mod unfriendly. There are very few mods that actually work properly with it.
Long War is really about it.
-----
Xcom 2 which is very similiar as a game on the other hand was made with mods in mind and there are a bunch of game.changing ones.
If you really want a modded game thats where you should be looking.
It also had a Long War mod as the developers of the mod were paid to releases it.
A game without mod as an educational for Long War.
Long War does not have a learning quest. And in it you can put the level of complexity starting from the average. If you have not played before, it will be hard.
To understand what option for your game. In Long War, in the initial mission, there are 6 characters in red armor at once, and the game without a mod has only four characters.
