One interceptor with laser might shoot one down on easy difficultys,on impossbile you need luck and or dodge boost.If you don not intercept UFO it will scout(maybe panic increase too) and I think 2-5 days later a new UFO will spawn on "destory the satellite" mission, depending on month and difficulty UFO will be large scout or battleship.
You can let the scout away and kill the big one for better loot,but battleships are the best UFOs in the game,so you need firestorms againts it.On Classic+ it 2 shoots interceptors.

3.) aliens roll to send a second ship with the mission to take down your satellight. second ship is usually larger than first ship.
if you are talking about the quest ship that just appears and if you don't shoot it down it will appear somewhere else later.
