Yes, this guide has a lot of other stuff in it as well as that, but then again, that is what makes it one of the best ones out there for doing what you want to do.
You'll always export/import as SMD or DMX (with possibly a QC file involved), never as a MDL.
Scene properties is about the third button along on the Properties Panel. You'll need to scroll down to find the Source Engine Export panel. What you'll need to do is set the export file path, as it has none by default. (I recommend saving a default filepath into your Blender Startup session).
