What are Eggs?

I discovered it relatively recently, but still don’t understand what it is and what it’s for?

Every egg you pick up gives you a bonus to a random stat on that character. Look at the stats panel on the left side of the screen during character selection for reference.

Note: When picking up the eggs during a stage, it will briefly display the random stat increase that's been given as floating text.

personally i love the eggs, can allow you to make any character be utterly unstoppable if you put the time into it

I read if your movement speed gets leveled too much via eggs it can become borderline unplayable, is that true? Or was that changed/fixed?

It's true but there is a way to remove eggs as well.

You dont need the eggs, they utterly destroy any semblance of challenge. Thankfully theres a checkbox to disable them.

The King in Yellow planted them in the game to corrupt every character except Sigma (who is a machine). Using them is a mistake. Don't let yourself be corrupted.
