Depends on your level of patience I guess! Definitely discourages save scumming to not have it. Can be super frustrating losing a bunch of progress 'cause you couldn't save though.
For me, the best one is the removal of the cutscene for herb picking.

i love this game and the previous to bits but the save system makes me want to comit unspeakable warcrimes.
I think you can quit out to create a save at any time no? So you can still save when you want, they just make it more of a faff.
The attention span of mice. Most will never play past 20 hours unless they accidentally leave the game running in the back ground.
I think the method used in KCD1 was a decent balance between one-save and PC instability. I'll see if KCD2's is decent or too frustrating for me. If the latter, I know there are solutions.
The three listed seem to be just reduce-frustration/tedium mods. That's fine imo if it helps people enjoy the game with small changes like that.
