Online COOP?
How does this game not have online COOP? I think it would save the game.

Simple answer. It wasn't programmed into the game.

Alternative answer: It was but was taken out. Reasoning: Fallout 76 and Starfield's development is so interlinked I believe FO76 was put to market to test many systems before going 'big' with Starfield.

This is all speculation without any solid proof beyond 'gut feel' based on what I've been researching about both games for the last 6 years. But there are some hints.

First is in the credits for Starfield is a company called The Multiplayer Group. Looking at their website SF is the only game they are credited with that isn't MP.

Second is the EULA has many references to anti cheat and online services. It is almost a direct copy of FO76s instead of say FO4. These are things only relevant to MP and a weird thing to have in an offline game.

Next is game design. 24/7 (or planet equivalent) vendors is something only needed in a MP game as you can't manipulate time and they need to be accessible for everyone. Then there is the 1000 planets which only makes sense for players to spread out and 'own' their own piece of the Settled Systems. There are many systems in SF that only make sense from a MP perspective.

FO76 came about from a Bethesda 'game jam' session where Doom netcode was added to FO4. It was completely untested in large scale and not worth gambling a new game on. That is where FO76 comes in as a proof of concept.

But... FO76 released to poor reception based on its initial design. That bad release I feel was enough to scare Bethesda off making SF also MP. The irony being that after they moved SF teams to FO76 to create the Wastelanders update it grew in popularity again. So much so Bethesda themselves keep advertising how it has one of the best communities in gaming (I don't fully agree with that).

So... my theory is SF was meant to be a larger scale space FO76. Too much data just 'fits'. I believe they stumbled over their own feet and got scared off.
Because it is a stupid idea that is wht.

Coop does not save single player games.

Oh, yes, the same way this same "complaint" "saved" Skyrim, right? And Fallout 4? Please. Not all games need MP options. If you prefer games with MP options, the solution is simple, go play them.

Coop is not functional in NMS, missions and combat encounters are not synced properly.

That and NMS was always stated to be multiplayer. Sure you can sort of turn it off but... I remember all the complaints about griefing in the forums. I personally think Coop / MP was a determent.

That explains why its a single player niche game and why its dominating SF.
