The Star Eagle is probably the nicest looking of the non do it myself ships. But you don't buy that one either.
The Star Eagle is OK i never used it much.
The Kepler R is OK but slow.
The best ship IMO for purchase is the Dragon Fire II from Eleos Retreat but it's later in the game. Early game is Dragon Fire i, but again I never used it much.
Once I have a Starborn ship I usually use it 100%.
The problem is finding something. Vendors carry like 5 models each to sell on the average, and the odds of getting the model you want or even just a bargain basement low cost model to rebuild is kind of low. It may be 'smart' and provide only cheap models when you are level 5 or something but NG+ first ship, you get offered stuff like a watchdog III that costs 300k units or whatever. I haven't seen anything under 150k at a vendor in a long time (since before level 50 or so).
That aside, you can get any freebie (the TA junker watchdog is the easiest, or the mantis is about equal to that but you have to find the note) to tear up, or even rebuild the frontier.

Stealing one is still the easiest: if you can capture in space (requires leveling up once and putting a point in the skill) grab a ship kill mission off the board and go capture it. repeat until you have a fleet of them. If you started with bounty hunter, you can capture the first ship right out of the mine - intro where you learn to do space combat.

On topic, there are some 250 models** in game. For practical use, the silent runner (cllass C) has a ton of cargo space and a half decent starting design, but even that needs new weapons and a little customization (bigger fuel tank for late game, improved interior as you prefer, etc). Unfortunately it looks like whoever designed it was doing their build to 'add 100 unique pieces for next perk' design project.
For looks... I won't offer one, because there are quite a few very pretty models and its hard to pick a favorite.
** I think its actually just over 100 if you ignore same model, different gear or flavors like faction versions of same ship.
